Ingredients:

2 Tbsp Olive Oil

½ Onions, diced

¼ Red Pepper, diced

½ cup Mushroom, diced

1 extra firm Tofu, drained, around 100 grams

2 cups Spinach

¼ tsp Garlic Powder

¼ tsp Turmeric Powder

¼ tsp Cumin Seed

¼ tsp Curry Powder

Salt and pepper

 

Procedure:

  1. Heat olive oil in a non-stick pan.

2. Add and saute onions until translucent.

3. Add the red peppers and mushrooms. Mix until well combined.

4. Using your hands, crumble the tofu into the pan.

5. Mix again until well combined.

6. Add the spinach.

7. Cook the mixture until the spinach is wilted.

8. Add all the spices.

9. Mix again and season with salt and pepper.
