A simple packed lunch meal that you can prep for days is this Salmon and Pesto Salad. Pesto paired with salmon is pure goodness!! Then add spinach for a much healthier option.

In this recipe, you can actually use left-over salmon and turn it into something more appetizing. This is great when you need a quick meal for busy days too. Even the pesto can be easily made. While there is a lot of pesto sauce in the market, homemade is always the best. It wouldn’t take too long to prepare the pesto because you just need to blend the ingredients together. You can make a big batch of pesto sauce too and use it for another meal prep.

Topping this dish with walnuts make an excellent finishing touch!


Preparation time: 15 minutes

Servings: 4

Ingredients:

For the Basil Pesto:

  • ¼ cup fresh Basil
  • 2 Garlic cloves
  • 15 grams of Almonds
  • ¼ cup Parmesan Cheese
  • ¼ cup Olive Oil
  • 1 Tbsp Lemon juice
  • Salt, to taste

For the Salad:

  • 4 cups fresh Spinach
  • 4 fried Salmon Fillets, 150 grams each fillet
  • 60 grams Walnuts

 

Procedure:

  1. Add all the pesto ingredients in the food processor.

2. Pulse until smooth and well combined.

3. Season with salt. Set aside.

For the salad:

  1. Prepare the lunch box and add the fresh spinach and fried salmon.

2. Add the walnuts.

3. Add 1 Tbsp of basil pesto on top of the fried salmon.
