This cauliflower stir-fry is special. Why? Because there are so many different flavors mixed and they go perfectly together. It shows that you don’t need to always use different seasonings to make a rich and flavorful meal.
This low carb, healthy meal is also beyond easy and can be done in less than an hour. A simple dish yet loaded with healthy ingredients. Cauliflower is one of the best vegetables to consume when on keto. It can replace rice, pasta, and potatoes. It is also rich in vitamins K and C and can prevent heart disease and cancer.

Ingredients:
- 4.5 oz. Chicken breast, chopped or ground
- 1 tbsp. Butter
- ½ tbsp. Cooking Oil
- 2 Bacon, sliced into strips
- ½ Sweet Red Pepper, chopped into pieces
- 6 Green Olives, sliced into rounds
- 1 cup Cauliflower Rice
- 2 tbsp. Crushed Almonds
- 4 – 6 Basil Leaves
- 1 Egg
- Black pepper and salt to taste
Procedure:
- In a skillet over medium-high heat, add cooking oil.
2. Add butter.
3. Once heated, add the sweet red pepper and cook for 3 minutes.
4. Add the chicken breast and cook for 5-8 minutes, or until done.
5. Now add the bacon and stir.
6. Add olives and almonds. Stir.
7. Add the cauliflower rice, stir and cook for 5Â minutes and set aside.
8. Fry one egg.
9. Serve in a bowl and top with 1 egg. Enjoy!
