This dish is easy to pull together and pair well with everything. You can transform simple vegetables into a flavorful, savory and delectable dish like this one. Only a few ingredients are required but it tastes good nonetheless.

Ingredients:

1 Tbsp. Oil

¼ Sweet Red Pepper, chopped

1 oz. Zucchini, chopped

1 oz. Eggplant, chopped

2 oz. Tomatoes, chopped

2 Eggs

1 Tbsp. chopped Parsley

Salt and black pepper

 

Procedure:

  1. In a pan over medium-high heat, add 1 tbsp oil.

2. Once heated add the chopped sweet red pepper and cook for 5 minutes.

3. Add zucchini.

4. Add eggplant.

5. Stir well and cook for 10 minutes.

6. Add tomatoes and cook for 5 minutes.

7. Crack 2 eggs in the pan. Scramble and cook for 3-5 minutes.

8. Add parsley.

9. Just stir and serve.
