Who loves having eggs in the morning? Eggs are a staple during breakfast and you can have it scrambled, sunny-side up or even hard-boiled. But the best thing about eggs is that you can be creative in making different egg recipes. It’s so easy to combine with other ingredients such as vegetables, meat, and fruits.

Today’s recipe features Crab Egg Roll. An easy-to-prepare, easy-to-cook dish that is perfect as a start-of-the-day meal. It is packed with protein and healthy fats from different ingredients such as spinach, mock crab, avocado, cucumber, green beans, cherry tomatoes, and eggs.


Preparation / cooking time: 30 minutes:

Servings: 1

Ingredients:

2 Eggs

2 Tbsp of Olive Oil

8g of minced Onion

15g of Spinach

20g of sliced Mock Crab

20g of sliced Avocado

20g of sliced Cucumber

80g of Green Beans

30g of Cherry Tomatoes

1 Tbsp low-carb Milk

 

Procedure:

  1. Mix the green beans with cherry tomatoes and soak everything with 1 Tbsp of olive oil. Broil for 5 minutes.

2. Mix the two eggs, the spinach, milk, and the minced onion in a bowl. Grease your pan with 1 Tbsp of olive oil and cook the egg mix for 5 minutes.

3. Put the egg “pancake” on a separate plate and add slices of mock crab, cucumber, and avocado in the middle-right.

4. Roll up the egg over the ingredients in the middle. Slice up the egg roll into smaller rolls.

5. Put the separate egg rolls next to the broiled green beans and cherry tomatoes.
