Ingredients:

For the burrito wrap:

  • 2 eggs
  • 1 Tbsp Coconut Cream
  • 1 Tbsp Sour Cream
  • 1 Tbsp fresh Basil, chopped
  • 1 Tbsp fresh Dill, chopped
  • Salt and pepper

For the filling:

  • 30g of Bacon, cooked, chopped
  • 1 Tbsp Butter
  • 1 Romaine Lettuce, shredded
  • 1/4 Red Pepper, diced
  • 2 Tbsp Cheddar Cheese, shredded

 

Procedure:

  1. Crack eggs in a bowl.

2. Add the coconut cream and the sour cream.

3. Add the fresh herbs and season with salt and pepper.

4. Whisk the mixture until thoroughly mixed. Set aside.

5. Heat a non-stick skillet and add butter.

6. Add the egg mixture.

7. Cover the egg mixture to cook.

8. Let the top of the egg be cooked.

9. Place in a serving plate and add all the fillings and serve.
