According to USDA Nutrition Database, zucchini has 2.41g net carbs per 1 cup, making it an ideal option for keto. While Salmon is rich in B vitamins, potassium, protein, and omega-3 fatty acids. Not to mention, these two ingredients taste really good too! Walnuts are added to the dish as well for that extra crunch. And of course, lemon, and mayonnaise on the side makes it more perfect.

Ingredients:

  • 100 grams Zucchini, desseded
  • 150 grams Smoked Salmon, shredded
  • 1 Scallion
  • 15 grams Walnuts
  • 1 Tbsp fresh Parsley, to garnish
  • 2 wedges of Lemon
  • 2 Tbsp Mayonnaise, to serve

Procedure:

  1. Prepare all the ingredients.

2. Slice the deseeded zucchini and place it on a serving plate.

3. Add the shredded smoked salmon to the plate.

4. Slice the scallions and add to the plate.

5. Add the walnuts and fresh parsley.

6. Serve with lemon wedges and mayonnaise.
