Simply cook the onions, broccoli, and spinach together. Season with salt and pepper to taste. Add the quail eggs last combining it with the spinach. And that’s it! It’s super easy and fewer ingredients needed.

What I like most about this recipe is that it contains broccoli and spinach. We know these vegetables have become a staple in the keto diet. Broccoli is considered a nutritional powerhouse packing in vitamins A and C, B-vitamins, magnesium, and potassium. Preparation/cooking time: 20 minutes

Servings: 1

Ingredients: 

  • ¼ cup Red onion, sliced into half-moons
  • 5 oz. Spinach
  • 1 oz. Broccoli
  • 3 Quail Eggs
  • 1 tbsp. Olive oil
  • Salt
  • 1 tsp. Pumpkin seeds, ground

Procedure:

  1. In a pan, add olive oil and add the onion and broccoli. Cook for 5 minutes.

2. Add the spinach and cook for 5 minutes. Season with salt and stir.

3. Crack 3 quail eggs in the pan and scramble them with the spinach. Cook for 3 minutes.

4. Serve topped with 1 tsp ground pumpkin seeds and enjoy!
